Makkan Peda

Only recently did I have a chance to taste the Arcot famous Makkan Peda but have heard of it several times from TH whose description about it always made me drool and I realized it was not over exaggerated when I tried it. I was a little too ambitious to try out a big batch of this sweet  for Diwali that too with whole wheat flour in place of maida. However, it turned out very good and tasters appreciated it and so I am entitled to let out the recipe now.

Ingredients
  1. 1. Unsweetened Khoya - 250 g
  2. 2. Whole wheat flour - 150 g
  3. 3. Milk Powder - 50 g
  4. 4. Ghee - 1 tbsp
  5. 5. Baking Powder - 1/2 tbsp (can replace it with 1/2 tsp of baking soda)
  6. 6. Curds - 3 tbsp
  7. 7. Chopped nuts (almonds & pistachios) - 1/4 cup
  8. 8. Melon seeds - 3 tbsp
  9. 9. Cardamom powder - 1/4 tsp
  10. 10. Rose water - 1 tbsp
  11. 11. Sugar - 500 g
Instructions
  1. Take the khoya and knead it as smooth as dough by smearing a portion of it at a time on a working surface with the help of your palm-heel.
  2. Add sifted wheat flour, milk powder, baking powder together and then add kneaded khoya, curds and ghee to it.
  3. Knead into a soft and smooth dough with light hands by using few drops of milk or water if required. The dough must be softer than chappati dough but must hold shape when rolled. Rest the dough for 15 minutes.
  4. Meanwhile prepare stuffing by mixing cardamom powder, crushed nuts and melon seeds in a small bowl.
  5. Pinch small portion of say 20 g and roll it. Make it into a small cup shape, fill a half a tsp of stuffing and roll gently into a smooth ball or flat peda without cracks on surface. Repeat for entire dough.
  6. Mix sugar with equal amount of water and bring it to a boil. Simmer heat for 5 minutes and turn off stove. Add rose water to it.
  7. Deep fry the pedas in heated ghee in medium flame carefully without burning or sticking to bottom.
  8. Drain the pedas and drop them immediately into hot sugar syrup and let them soak for a couple of hours at least.
  9. While serving garnish the makkan pedas with the stuffing mix.
P.S
  1. * Over working on dough or using tough hands make makkan pedas tight and hard.
  2. * Too much milk powder or/ and khoya would make the pedas burn on surface while frying and end up having undesired texture.
  3. * More than enough baking powder/ soda will render too soft peda that'll soak lots of sugar syrup and disintegrate.
  4. * Fried pedas must be dropped into hot sugar syrup for soaking well.

Pineapple Oats Muffin

Pineapple recipe #4: Muffins with Kesari topping, a fusion dessert (I’d like to take the credit for this ‘fusion’ part here 😉 ). I have used whole oats this time, as in without powdering so it rendered a flaky, chewy texture to muffins. As it is made with whole wheat, oats & pineapple and is less on sugar and butter it makes a lovely breakfast along with a milkshake.

Ingredients
  1. 1. Whole wheat flour - 1 cup
  2. 2. Whole Oats - 1/2 cup
  3. 3. Sugar powdered - 3/4 cup
  4. 4. Baking powder - 1 tsp
  5. 5. Baking Soda - 1 pinch
  6. 6. Pineapple juice - 1 cup
  7. 7. Butter - 2 tbsp
  8. 8. Pineapple chunks - 2 tbsp
Instructions
  1. Preheat the oven to 200 degrees Celsius.
  2. Mix all the dry ingredients in a mixing bowl and add melted butter and pineapple juice to it and get the batter in pouring consistency.
  3. Fold into it the pineapple chunks and pour into muffin moulds.
  4. Bake for 15-20 minutes depending on your muffin mould size. Check with a toothpick if the muffin is done. De-mould and cool them on cake rack.
  5. Serve topped with pineapple kesari.

Pineapple Kesari

Pineapple recipe #3: Kesari/ Sooji Halwa. Ever since my childhood for any occasion be it a birthday or anniversary or a special guest at home or diwali or whatever, We’ve indulged in kesari for breakfast as a dessert. Though the orange colored, elaichi flavored, glossy version is the regular back home, I’ve shared the pineapple kesari here with absolute natural color and flavor.

Ingredients
  1. 1. Pineapple juice - 2 cups
  2. 2. Semolina - 1 cup
  3. 3. Sugar - 1 cup
  4. 4. Ghee - 2 tbsp
  5. 5. Cashews - 6
  6. 6. Raisins - a fistful
  7. 7. Pineapple chopped - 2 tbsp
  8. 8. Pineapple chunks and cherry for garnish (optional)
Instructions
  1. Roast semolina with a spoon of ghee. add pineapple juice in simmered heat and stir continuously to avoid lumps.
  2. Once the semolina is completely cooked add the sugar and mix well. It loosens a bit and thickens again.
  3. In the meantime using a tadka pan roast cashews and raisins in the ghee and pour over the kesari.
  4. Turn off heat and mix in pineapple chunks.
  5. Serve hot garnished with pinapple chunks and cherry.

Eggless Chocolate Mousse

I should admit this is a sinful dessert, but an irresistible one. I had tried this out for a friends-couple that we invited for lunch and they apparently loved it. I always thought mousse without eggs is not going to be as good and I was wrong, this one was pretty close. One thing I can tell out of my experience is quality of the ingredients matter as much as the proportions; the cream has to whip up really good and how can the chocolate dessert be heavenly if the cooking chocolate used tastes like mud?! So atleast half the credits or blames go to the ingredients here.

Ingredients
  1. 1. Whipping Cream - 1 1/2 cups
  2. 2. Grated cooking dark chocolate - 2 cups (I used Morde)
  3. 3. Butter - 1 tbsp
  4. 4. Instant Coffee Powder - 1 tsp
  5. 5. Vanilla extract - 1/2 tsp
  6. 6. Chocolate vermicelli/ shavings and sugar candies
Instructions
  1. Melt the grated chocolate and butter in the double boiler method. Set aside for it to cool completely.
  2. Mix instant coffee powder to a tablespoon of warm water and keep aside.
  3. Whip the cream until soft peaks consistency using a electric beater or a hand beater.
  4. Add vanilla extract and coffee mixed in water to the chocolate and mix well.
  5. Now little by little gently fold in the cream to melted chocolate.
  6. Pour into setting bowls, wrap with cling covers and set in refrigerator for overnight or 6 hours minimum.
  7. Before serving, sprinkle the sugar candies and chocolate vermicelli.
